NANA'S POPOVERS 
1/2 tsp. melted shortening or salad oil
1 c. sifted all purpose flour
1/4 tsp. salt
3/4 c. plus 2 tbsp. milk
2 eggs

Heat oven to 450 degrees. Place muffin pans in oven to heat. Melt shortening. Measure sifted flour and salt into flour sifter, set in medium bowl. Sift. Gradually add milk, while stirring, to make smooth batter.

Break eggs into a bowl. Beat until thick and foamy with an electric beater. Then add to batter with melted shortening or salad oil. Now beat batter 2 minutes. (This beating is most important).

Remove hot muffin pans from oven and grease well. Then fill 2/3's full with batter. Wipe off any spilled drops of batter from pans.

Immediately put popovers in hot oven of 450 degrees and bake 30 minutes. Then lower heat to 350 degrees and bake 10 minutes longer. DO NOT OPEN OVEN DOOR DURING BAKING. Serve at once. Makes 8 to 9 popovers.

Note: If you do not have enough batter to fill all of the cups in muffin pan, put water in empty cups to keep grease from burning.
