This recipe is contained in a handwritten collection of recipes probably dating back to the early years of the 20th Century.
"Beat 2 eggs slightly.
Sift 1/2 cup flour with 1/4 tea spoon of baking powder and 1/4 tea spoon salt. Take 1 1/4 cups of milk. Stir well together and pour into from 9 to 12 well-buttered muffin tins. Set your oven for 400 degrees and close the door on the popovers. The oven is cold remember when the pop overs go in. Dont open the oven door for 45 minutes by the clock..no matter how curious you are to peek. Dont try to pour this amount into 6 or 8 muffin tins. You will have sticky centers if you try to over fill the muffin tins.
Eat them piping hot with plenty of butter."
