TAFFY APPLE SALAD 
4 c. unpeeled apples
1/2 c. pineapple juice
1/2 c. sugar
1 tbsp. flour
2 tbsp. vinegar
1 egg, beaten
8 oz. Cool Whip
1 c. salted chopped peanuts

In saucepan, heat juice, sugar, flour, vinegar and egg until thick. Cool. Mix apple with 1/2 cup peanuts, fold into Cool Whip and then fold into cooled mixture and sprinkle with remaining peanuts. Chill overnight.
