BEAN CHILI 
1 lg. onion, chopped
2 tbsp. olive oil
1 c. picante sauce
2 (29 oz.) cans crushed tomatoes (or whole tomatoes, chopped)
1 (15 oz.) can pinto beans, drained
1 (15 oz.) can kidney beans, drained
1 (15 oz.) can black-eyed peas, drained
1 tsp. cumin

In a large saucepan or Dutch oven saute onion in olive oil until softened. Add remaining ingredients, bring to a boil and simmer on low heat for at least 10 minutes. OPTIONS: Browned meat or sausage can be added.
