OXTAIL RAGAU 
2 lbs. oxtails, cut into sections
3 tbsp. fat
1 c. tomato juice
1 c. hot water
1 lg. onion, sliced
1 clove garlic
1 bay leaf
4 whole allspice
1 tbsp. vinegar or lemon juice
1 tbsp. sugar
Salt and pepper to taste
Flour

Roll the oxtail pieces in flour which has been seasoned with salt and pepper. Brown on all sides in hot fat. Add the remaining ingredients. Cover and simmer gently until the meat is tender, about 3 to 4 hours. Serves 4.
