OXTAIL SOUP 
2 lbs. oxtails, cut in pieces
2 ribs celery, chopped
3 med. onions, chopped
2 qts. water
3 lg. white potatoes, diced
2 or 3 carrots, diced
1 c. barley
1 (21 1/2 oz.) size can tomatoes
Salt and pepper to taste

Put meat, celery, onions and water in large pot. Add water, salt and pepper. Bring to a boil. Reduce heat and let simmer about 3 hours. Add potatoes, carrots, and barley. Let simmer, about 45 minutes longer. Add tomatoes last 30 minutes of cooking time.
