POTATO CASSEROLE 
2 c. mashed potatoes
1 (8 oz.) pkg. cream cheese, room temperature
1 sm. onion, finely chopped
2 eggs
2 tbsp. all-purpose flour
Salt & pepper
1 (3 1/2 oz.) can French fried onions

Put potatoes in large bowl. Add cream cheese, onion, eggs and flour. Beat at medium speed until all are blended then at high speed until light and fluffy. Add salt and pepper to taste.

Spoon into greased 9 inch baking dish. Spread canned onions evenly over top. If dish is made ahead of time, don't add onions until just before baking. (Add approximately 10-15 minutes to baking time if made ahead and refrigerated.)
