CHINESE CHOP SUEY | |
2 qt. onions 2 qt. celery 2 1/2 lb. ground pork 1/2 lb. butter 4 cans bean sprouts (lg. ones) 2 lg. cans Chinese Fancy vegetables 8 tbsp. cornstarch 8 tbsp. soy sauce 2 tsp. salt 1 1/2 tsp. pepper 2 1/2 tbsp. sugar Saute onions in butter until soft not brown. Saute pork in a little Crisco, do not brown. Drain off fat put pork and onions in large kettle. Add celery, salt, pepper and sugar. Add 1 quart water, bean sprouts and vegetables along with their liquids. Bring to a boil. Thicken with cornstarch. Cook 5 minutes. Add soy sauce. Adjust seasoning to taste, if necessary. Serve with Chinese noodles, rice or as hot sandwiches over open buns. Makes 7 quarts. May be cut in half. |
