HAM WITH NOODLES AND SOUR CREAM 
2 c. cubed (1/2 inch) lean ham
1 (4 oz.) can mushrooms
1/4 c. chopped onion
2 tbsp. butter
1/4 tsp. salt
1/4 tsp. paprika
1/8 tsp. pepper
1/4 c. chopped green pepper
4 oz. (about 2 c.) uncooked noodles
1 1/2 c. water
1 c. sour cream
Parsley

Drain mushrooms well and reserve the liquid. Pan-fry mushrooms, onion, and ham in butter about 5 minutes. Add salt, paprika, and pepper. Stir in green pepper. Arrange noodles on top of ham. Pour in mushroom liquid and water. Cover and simmer for about 15 minutes. Uncover and cook for another 15 minutes. Stir in the sour cream and cook, uncovered, for 5 minutes. Serve immediately garnished with parsley. Yield: 4 servings.
