GOURMET QUICHE 
7 oz. low-fat ricotta cheese
1 beaten egg
1 tsp. onion flakes
1/2 tsp. Italian seasoning
1/4 tsp. pepper
Dash Worcestershire sauce
Dash Parmesan cheese
1 (1 lb.) can spinach or 1 pkg. frozen broccoli

Spray pan with Pam (pie pan). Line with 1/2 vegetables. Mix cheese, egg and spices together and put over "crust". Use remaining 1/2 vegetables as top crust. Shake Parmesan cheese on top. Bake at 350 degrees for 45-50 minutes. Serving size: 4 meat groups and 1 10% vegetable group.
