LENTIL SOUP | |
1/2 lb. lentils 1 lb. uncased Italian sausage 6 c. salted water 1 onion 1 clove garlic 2 stalks celery 1 tbsp. parsley 1/4 c. olive oil 1/2 c. stewed tomatoes Salt and pepper Add lentils to water; bring to a boil. Simmer, closely covered until tender (1 to 1 1/4 hours). Meantime, chop fine the onion, garlic, celery and parsley. Heat olive oil until hot. Cook chopped vegetables until onion is slightly browned. Add cooked and browned Italian sausage. Turn down heat. Add tomatoes and simmer for about 15 minutes. When lentils are tender, add tomato mixture. Cook for 15 minutes over very low heat. |
