FRIED RICE 
4 tbsp. peanut or vegetable oil
4 shallots, thinly sliced
4 oz. chicken meat, beef, pork or shelled shrimp, finely chopped or combination
1 c. shelled green peas or chopped green beans
4 tbsp. soy sauce
6 c. cold cooked rice
Ground black pepper

Heat 2 tablespoons of the oil in a wok or skillet, add half of the shallots and stir-fry until golden. Add the meat, vegetables and 2 tablespoons of the soy sauce and stir-fry until meat and vegetables are tender. Remove from the pan and set aside.

Heat the remaining 2 tablespoons oil in the pan, add the remaining shallots and stir-fry until golden, add the rice and remaining 2 tablespoons soy sauce and stir-fry until rice seems dry. Return the meat and vegetables to the pan and stir-fry 2 minutes. Transfer to a serving dish and sprinkle with black pepper.
