3 STORY APPLE PIE 
2 cups mashed apples (dried or fresh)
1/2 cup sugar
Baked 9 inch pie crust

Cook apples in small amount of water until tender; drain and add sugar. Place in bottom of baked pie shell.

Custard Filling:

2 egg yolks
1/2 c. sugar
1 c. milk
2 tbsp. flour
1 tsp. vanilla

Beat egg yolks until smooth. Add sugar, milk, and flour. Cook over low heat until thickened. Add vanilla and pour over apple mixture.

Meringue:

2 egg whites
3 tbsp. sugar
1 tsp. vanilla

Beat egg whites until stiff, add sugar and vanilla; beat 1 minute more. Pour over custard filling and brown in a 350°F oven.
