CHEESE SOUFFLE 
3 eggs
2 tbsp. flour
2 tbsp. butter
1 1/2 c. milk
1 c. grated cheese
pinch of salt and dash of cayenne

Make a white sauce of flour, butter and milk; add the beaten egg yolks, seasoning and grated cheese. Stir until cheese is melted. Let stand a few minutes to cool. Add stiffly beaten egg whites.

Bake in a casserole in moderate oven about 25 minutes. Serve immediately.
