3 eggs
1 1/4 c. sugar
1 c. vegetable oil
1/4 c. freshly squeezed lime
2 tsp. grated lime rind
1 3/4 c. shredded zucchini
2 c. unsifted flour
2 tsp. baking soda
1 tsp. salt
1/2 tsp. nutmeg
1 c. chopped nuts

Combine eggs, sugar, oil, rind and juice. Blend well, stir in zucchini. Add dry ingredients. Stir in nuts. Bake in greased 9 x 13 inch pan in 350 degree oven for 45 to 50 minutes. Cool in pan. Cut into squares to serve. Frost with lime glaze or cream cheese.
