CINCINNATI'S FAMOUS SPLIT PEA
SOUP
 
2 c. dried peas
2 qt. water
2 c. celery and leaves
1 c. parsley, chopped
1 c. onions, chopped
1 leak, chopped; optional
1/3 tsp. thyme
3 tbsp. oil

Boil peas for 1 hour while skimming foam from top. Add rest of ingredients and simmer for 30 minutes. Add seasonings and oil and cook for 5 minutes. maybe made with lentils. Serves 8.
