BLUEBERRY BRAN MUFFINS | |
2 1/2 c. bran flakes 3/4 c. buttermilk 1/3 c. maple flavored syrup (I use reduced calorie or diet) 1 1/4 c. flour 1/4 tsp. salt 1 egg 1/4 c. vegetable oil 1 tsp. baking soda 1/2 c. blueberries, drained or frozen, raisins or chopped nuts Mix bran flakes, egg, buttermilk, syrup and oil in bowl. Sift flour, soda, and salt; stir into cereal mixture. Stir in fruit, just until mixed. Pour 1/4 cup batter into each greased muffin cup. Bake in preheated 350 degrees for 15-20 minutes, or until toothpick inserted comes out clean. Yield: 1 dozen. 1 muffin = 1 starch and 1 fat. |
