GOLDEN FRUITCAKE | |
1 c. butter 2 c. sugar 4 eggs 4 c. flour 1 1/2 tsp. baking soda 1 1/2 c. buttermilk 1 1/2 c. pitted dates, chopped 1 1/2 c. pecan halves 3/4 c. candied cherries, sliced 3/4 c. candied pineapple, grated 1/4 c. fresh orange peel Cream butter well; gradually add sugar, beating well. Add in one cup of flour, beating well after each addition. Stir soda into buttermilk and add to creamed mixture alternately with flour beating until smooth. Stir in pecans, dates, fruit and orange peel. Pour into greased tube pan. Bake at 325 degrees for 2 hours or until done. GLAZE: 1 1/4 c. sugar 2 tbsp. lemon juice 1 c. orange juice 2 tbsp. orange peel, grated Heat over high heat until it bubbles and pour over cake. |
