COCONUT POUND CAKE 
2 c. sugar
1 c. Crisco
5 eggs
1 c. buttermilk
1 tsp. coconut flavoring
2 c. self-rising flour
1 (7 oz.) can coconut

Mix ingredients for cake in order as stated. Grease and flour tube pan (not Bundt). Do not preheat oven. Bake at 350 degrees for 45 minutes and 300 degrees 15 minutes, and 250 degrees for 15 minutes.

ICING:

1 c. sugar
1 c. water
1/2 tsp. coconut flavoring

Mix all icing ingredients and boil briskly for 1 minute. Pour over cooled cake.
