CLUB SAUCE 
12 large tomatoes, cut up in quarters
2 large onions, chopped
1 cup chopped celery
2 cups vinegar
2 cups white sugar
2 tsp. salt
4 large red peppers, chopped

Stir together tomatoes, onions, celery, vinegar and salt. Do NOT add sugar at this time! COOK 1 HOUR, stirring to avoid sticking.

Add sugar and chopped red peppers. Cook at least 3/4 hour to cook down, may need more time for desired thickness. Stir frequently on medium heat to avoid scorching.

Can while hot, in hot jars; seal immediately.

Makes 7 pints.
