PECAN SNOWBALLS 
1 c. butter
2 tsp. vanilla
1/2 c. sugar
1/2 tsp. salt
2 c. sifted flour
2 c. chopped pecans
1/2 c. confectioners' sugar

Cream together sugar, vanilla, butter. Add salt, flour and pecans. Shape into 1 inch balls. Lay on ungreased cookie sheet. Bake at 325 degrees for 10 minutes on bottom rack of oven, then 10 minutes on top rack of oven. Cool. Roll in confectioners' sugar.

These cookies are wonderful. You can tell when they're done because they turn golden. I made mine a little bigger than 1 inch, but they still took the same amount of cooking time. You can also sift some extra confectioners' sugar over the top of them to give them a cute, clean look if you are giving them as gifts!
