BANANA POPPY SEED MUFFINS 
2 ripe bananas, peeled
1 egg
3/4 c. sugar
1/4 c. oil
2 tsp. grated orange peel
2 c. flour
1 1/2 tbsp. poppy seed (optional)
2 tsp. baking powder
1/2 tsp. salt

Puree bananas in blender. Mix bananas, egg, sugar, oil, and orange peel until blended. Combine flour, poppy seeds, baking powder and salt. Stir banana mixture into flour mixture until moistened. Spoon into muffin cups. Bake at 375 degrees for 20 minutes.
