ZUCCHINI BARS WITH CREAM CHEESE
FROSTING
 
2 1/2 c. flour
2 c. sugar
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 c. vegetable oil
2 tsp. vanilla
3 eggs
2 c. raw grated zucchini
1 c. raisins
1 c. chopped walnuts

In a large bowl, combine flour, sugar, cinnamon, baking soda, baking powder, and salt. Add vanilla, oil, and eggs; beat at medium speed until well mixed. Stir in zucchini, raisins, and walnuts. Pour into well greased 9 x 13 inch baking pan. Bake for 45 to 50 minutes at 350 degrees. Cool thoroughly and frost.

CREAM CHEESE FROSTING:

1 (3 oz.) pkg. cream cheese
3 tbsp. butter, softened
2 c. confectioners' sugar
1 to 2 tsp. milk
1 tsp. vanilla

Combine frosting ingredients and spread over cooled cake.
