1 3/4 c. light brown sugar
1/2 c. vegetable oil
2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. salt
2 eggs
1 tsp. vanilla
2 c. apple, sliced
1/2 c. nuts, chopped
1/2 lb. (about 2 c.) whole cranberries

Cream together oil and sugar. Add eggs and vanilla and beat well. Sift together the flour and dry ingredients. Add to the first mixture and stir well until thoroughly combined. Stir in apples, cranberries and nuts. Bake in a well-greased 9 x 13 inch pan for 45 to 50 minutes at 350 degrees. Frost with cream cheese icing when cool.
