APPLE FRITTERS 
2 c. apples, chopped
1 tsp. butter
1 lg. egg
1 1/2 c. milk
3 tbsp. light brown sugar
1/4 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla
2 c. flour
3 tsp. baking powder
Vegetable oil for frying
Confectioners' sugar

Saute chopped apple in butter until done. Add oil to skillet and heat to 350 degrees. Combine egg, milk, brown sugar, salt, cinnamon, nutmeg, vanilla, and cooked apples. Add flour and baking powder to apple mixture and stir until well combined.

Drop fritter mixture by heaping teaspoonfuls into hot fat. Fry until golden brown on all sides - 2 to 3 minutes. Remove from skillet and drain on paper towels. Serve hot, sprinkled with confectioners' sugar.
