DELICATE SPICE CAKE 
2 1/8 c. flour
3 tbsp. baking powder
1 tsp. salt
1 1/2 c. sugar
3/4 tsp. nutmeg
1 tsp. cinnamon
2 tbsp. cocoa
1/2 c. shortening
1 c. milk
1 tsp. lemon extract
1 tsp. vanilla
2 eggs
1/2 c. nuts, finely chopped

Have all ingredients at room temperature. Measure the flour into a sifter. Add other dry ingredients and sift into bowl. Add shortening and 2/3 of the milk, mixed with flavorings. Beat 2 minutes by mixer or by hand. Add remaining milk and eggs. Beat 2 more minutes or 300 strokes. Fold in the nuts. Bake in 2 wax paper-lined 9 inch pans at 350 degrees for 30 minutes.
