SWEETHEART FRITTATA 
Salt and pepper to taste
6 med. red potatoes, pre-boiled and sliced in 1/2 inch slices
4 tbsp. olive oil
1 med. onion, sliced
1 med. red bell pepper, chopped
8 eggs, lightly beaten
1/8 tsp. thyme
1 c. grated Swiss or Jarlsberg cheese

In large skillet, saute sliced potatoes in olive oil 4 to 5 minutes over medium heat, adding onion and bell pepper. Add eggs, thyme, salt and pepper and cheese. When cooked on one side, invert onto a plate and slide back into pan to cook until eggs are set.
