Make enough pie crust for a very large two crust pie. Line a large pie pan, or casserole if your pie pan is shallow, with one crust.
Thickly slice 8 to 10 hard green tomatoes. Slice two large onions and saute in 1 cup butter. Slice 1/2 pound Swiss cheese and 1/2 pound of Muenster cheese. Sprinkle inside of pie crust with bread crumbs (we use wheat germ). Layer tomato slices, cheeses and sauteed onion in crust. Sprinkle with salt, oregano, basil and lots of black pepper. Repeat layers. Top with more bread crumbs or wheat germ and a sprinkle of wine vinegar.
Cover with top crust. Crimp edges and slash the top. Bake at 375 degrees F until browned. The pie takes about 1 1/2 hours to cook. We sometimes speed the process by steaming the tomatoes a few minutes before adding them to the pie.
