CHICKEN BREASTS WITH GRAPES 
12 half chicken breasts, boned
Salt, pepper & garlic powder, flour
4 tbsp. butter
3 tbsp. oil
1/2 c. dry sherry
2 onions, finely minced
3/4 lb. sliced mushrooms
2 tbsp. flour
2 c. chicken broth
1/2 c. white wine
1/2 tsp. salt
1/8 tsp. pepper
1 c. shredded ham
1 c. seedless white grapes
2 c. Hollandaise sauce (make your own)

Sprinkle chicken with salt and pepper, garlic. Powder dust lightly with flour. Saute chicken in 3 tablespoons butter and oil until golden brown. (Don't over do this.) Remove chicken to shallow casserole. Pour sherry over chicken. Add 1 tablespoon butter to skillet and saute onion until soft, and mushrooms and cook 3 minutes. Blend in flour. Gradually add broth and cook stirring until smooth. Add wine, seasonings and ham. Pour over chicken. Bake in covered casserole 30 minutes at 350 degrees. Uncover and stir grapes into sauce. Spoon warmed Hollandaise over chicken and brown under broiler. Watch closely.

This serves 12. IT is absolutely smashing for company. Can be made day before and heated and add Hollandaise the day of serving.
