2 c. fruit (berries, apples, peaches)
Use juice of 1/2 lemon for sweet fruit such as blueberries or peaches. Use spice - 1 teaspoon cinnamon for apples. 3 tbsp. shortening 1/2 c. milk 1 c. flour 1 tsp. baking powder 1/4 tsp. salt
Cream sugar and shortening. Add milk alternately with dry ingredients. Pour this batter over fruit which has been placed in a 8 x 8 inch pan or casserole. Combine 1/2 cup sugar, 1 tablespoon cornstarch, and 1/4 teaspoon salt. Sprinkle over batter. Pour 1 cup boiling water over all and bake at 375 degrees for 45 minutes or until lightly browned all over. This recipe can be doubled - use a 9 x 13 inch pan.
