8 lg. chicken breasts 8 tbsp. chopped green onions 8 tbsp. parsley flakes 8 tbsp. butter Salt Lemon pepper Egg Bread crumbs Skin and debone each chicken breast leaving meat all in one piece. Place each piece between 2 pieces of plastic wrap and beat with a mallet until about 1/4 inch thick. Remove plastic wrap and sprinkle each piece with salt and lemon pepper, 1 tablespoon green onion and 1 tablespoon parsley flakes. Cut butter in half (crosswise) then cut each half into 4 logs. Place a butter log at end of each chicken piece and roll up like a jelly roll, seal ends. Dust with flour dip in beaten egg and roll in bread crumbs. Chill at least 1 hour. Fry in deep hot fat until brown, about 5-6 minutes. |
