MEXICAN FRUITCAKE 
20 oz. crushed pineapple
2 c. flour
2 tsp. baking soda
1 c. pecans
2 c. sugar
2 eggs

Mix all ingredients. Bake in greased and floured 9 x 13 inch pan at 350 degrees for 30-35 minutes. Top with either frosting.

FROSTING:

2 c. sugar
1 stick melted butter
8 oz. soft cream cheese
1 tsp. vanilla

FROSTING #2:
1 (8 oz.) cream cheese
2 c. confectioners' sugar
1 stick butter
1 tsp. vanilla

Mix together.
