SPICY APPLE BARS 
1/2 c. shortening
1 c. sugar
2 eggs, beaten
1 c. sifted flour
1 tsp. baking powder
1/2 tsp. baking soda
Powdered sugar
1/2 tsp. salt
1 tbsp. cocoa
1 tsp. cinnamon
1 c. rolled quick oats
1 1/2 c. diced, peeled apples
1/2 c. walnuts, coarsely chopped (optional)

Cream shortening and sugar until light and fluffy; beat in eggs, one at a time. Sift together dry ingredients; add to creamed mixture. Stir in remaining ingredients. Spread into greased cookie sheet with 1 inch sides. Bake in 375 degree oven about 25 minutes. Cool slightly; cut into bars or squares. Sprinkle with powdered sugar. You can bake the batter in a smaller pan and serve warm as pudding with hard sauce for lemon sauce.
