UNBELIEVABLE SALAD 
1 can (15 oz.) crushed pineapple
1 pkg. (3 oz.) cherry-flavored gelatin
1 can (11 oz.) mandarin oranges, drained
1 carton (8 oz.) creamed cottage cheese
1 carton (4 1/2 oz.) frozen whipped topping, thawed
Lettuce leaves

Pour the pineapple with its juice into a small saucepan. Cook over medium heat until juice comes to boil, about 4-6 minutes. Remove from heat. Pour gelatin mix into large glass mixing bowl. Carefully pour pineapple and juice into bowl.

Stir with a wooden spoon until gelatin is dissolved. Chill in the refrigerator and stir in the oranges, cottage cheese and whipped topping. Pour into the square dish. Refrigerate until firm. Cut into squares and serve on lettuce leaves.
