MOM'S CORNBREAD 
3/4 c. flour
1 c. cornmeal
1 tsp. salt
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tbsp. sugar
1 egg
1 c. buttermilk
2 tbsp. oil or melted butter

When you turn the oven to heat, put in a 10-inch cast iron skillet that is well greased with a little oil and let it preheat. Oven should be set at 375.

Put dry ingredients in bowl and mix together. Then add liquids and mix by hand with wooden spoon.

Put in skillet and bake for 20-25 minutes. Watch carefully!

This is our favorite way to bake cornbread. If you don't have a cast iron skillet, bake it in a square glass pan.
