SOUTHERN CORNBREAD 
2 c. cornmeal
1 c. whole-wheat flour
2 tbsp. honey
3 tsp. baking powder
1 1/2 tsp. salt
1 1/2 c. milk
2 eggs
5 tbsp. oil

Stir together dry ingredients. Add milk and honey; mix well. Break in eggs and beat thoroughly. Stir in 3 tablespoons oil and beat until well blended. Heat 3 teaspoons oil in large cast iron skillet in 400 degree oven. Use 2 pans, if you like a thin bread. When pan is hot, add batter and bake 20 minutes.

I'm convinced the secret is in the cast iron skillet. Southern cooks carry the skillet to the table to serve.
