VEGETABLE OVEN OMELET 
3 eggs
1 c. milk
1/2 c. Bisquick
1/2 tsp. salt
2 cans (4 oz. each) whole green chilies
2 c. chopped tomatoes (2-3 med.)
1/2 c. chopped onion
2 c. (8 oz.) shredded Cheddar cheese

Heat oven to 350 degrees. Grease 8 x 8 x 2 inch baking dish. Beat eggs, milk, Bisquick and salt until foamy. Remove seeds from chilies; rinse chilies with water. Place in dish. Sprinkle tomatoes and onion evenly over chilies. Pour egg mixture over vegetables. Sprinkle with cheese. Bake uncovered until egg mixture is set and cheese is melted, 40-45 minutes.
