HUNGARIAN GULYáS | |
3 tbsp. butter 1 onion, chopped 2 tsp. Hungarian paprika 2 lb. cubed beef 2 tbsp. flour salt ž tsp. marjoram, crumbled 4 cups beef broth 1˝ cups potato cubes 1˝ tbsp. lemon juice Melt butter in a covered casserole. Add onion, stir and cook until soft. Stir in paprika and cook slowly for 1-2 minutes. Roll meat in flour and add to the onion, cooking only long enough to brown slightly. Sprinkle with a little salt and add marjoram. Pour in broth and bring to a boil. Cover and simmer for about an hour or until tender. Add potato cubes and cook 15-20 minutes until done. Remove from heat, stir in lemon juice and add more salt if necessary. Submitted by: REMowery |
