RAISIN PRALINE COFFEE CAKE | |
1. 1 1/2 c. raisins 2. 1/2 c. shortening 3. 3/4 c. sugar 4. 1 tsp. vanilla 5. 3 eggs 6. 2 c. sifted flour 7. 1 tsp. baking soda 8. 1 tsp. salt 9. 1 c. dairy sour cream 10. 1 tsp. baking powder 11. Pecan praline mix Chop 1 lightly. Beat 2, 3, and 4 until fluffy. Add 5 one at a time. Stir in 1. Resift 6 with 10, 7, and 8. Add to raisin mix alternately with 9. Spread half of batter in greased and floured 9 or 10 inch tube pan. Sprinkle with half of 11; repeat layers. Bake 50 minutes at 350 degrees or until cake tests done. Cool in pan ten minutes; turn onto rack. Serve warm or cold. PECAN PRALINE MIX: Rub together until well mixed: 1/3 c. butter 2 tsp. cinnamon 3/4 c. coarsely chopped pecans |
