PARSLIED BLEU CHEESE BALL 
1/4 lb. bleu cheese, softened
2 (8 oz.) cream cheese, softened
1/2 c. butter
1/3 c. stuffed olives, chopped
1 1/2 tsp. chopped chives
3/4 c. chopped parsley
1 sm. clove garlic, crushed
1 tbsp. brandy

Combine bleu cheese, cream cheese, butter, olives, chives, 1 1/2 teaspoon parsley, garlic, and brandy in a medium bowl. Blend. Line a 2 cup bowl with plastic wrap. Pack cheese mixture down firmly and refrigerate. To serve, turn cheese ball out and roll in chopped parsley. For a change of pace, add a 1/2 cup of chopped walnuts to the parsley. This is also good without the olives.
