APPLE RAISIN BRAN MUFFINS 
1 1/2 c. shreds of wheat bran cereal
1 c. skim milk
1/4 c. butter, melted
1/2 c. honey
1 lg. cooking apple (peeled, cored and grated) (1 1/2 c.)
3/4 c. raisins
1 lg. egg, well beaten
1 tsp. cinnamon
1 1/4 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. baking soda

Heat oven to 400 degrees. Lightly grease 12 muffin cups. In a large bowl soak cereal in milk for 5 minutes. Stir in butter, honey, apple, raisins, egg, and cinnamon. In another bowl combine remaining ingredients. With a rubber spatula fold flour into apple/bran mixture just enough to moisten. DO NOT OVERMIX. Evenly distribute among muffin cups. Bake 20 minutes or until done.
