RICE PUDDING 
1/2 c. water
3 eggs, slightly beaten
2 tsp. vanilla
2 1/2 c. milk, scalded
Cinnamon
1/2 c. instant rice, uncooked
1/2 c. sugar
1/4 tsp. salt
12/ c. raisins

Heat water to boiling. Remove from heat, stir in rice. Cover and let stand about 5 minutes. Blend eggs, sugar, vanilla and salt. Gradually stir in milk. Mix in rice and raisins. Pour mixture into ungreased 1 1/2 quart casserole dish. Sprinkle rice mixture with cinnamon. Place dish in square pan 9 x 9 x 2 inches. Pour very hot water into pan. Bake this in the oven in the pan of water. Bake about 70 minutes or until knife inserted halfway between center and edge comes out clean.
