RHUBARB MUFFINS | |
1 1/2 c. brown sugar 1 c. buttermilk 1 1/2 c. rhubarb, cut up 2 1/2 c. flour 2 tsp. vanilla 1/2 c. oil 1 egg 1/2 c. nuts 1 tsp. baking soda 1 tsp. baking powder 1/2 tsp. salt Combine ingredients. Drop in greased or paper-lined muffin tins. Combine 1/3 cup sugar and 1/2 teaspoon cinnamon. Sprinkle on muffin tops. Bake at 350 degrees for 20 minutes. |
