ZUCCHINI PUDDING 
1 1/2 c. zucchini, cooked
3 tsp. cornstarch
3/4 c. sugar
2 eggs
2 c. milk
1 tsp. vanilla
1 tbsp. butter
Pinch of salt

Peel, dice and boil zucchini until soft. Drain and mash. Mix all ingredients on low speed of mixer to blend. Pour into dish. Sprinkle with cinnamon. Bake for 1 hour or until knife inserted comes out clean.
