BUTTERSCOTCH PIE FILLING 
1 pie shell, baked
2 eggs, separated
1 1/2 c. light brown sugar
1/8 tsp. salt
1 1/2 c. milk
4 tbsp. flour
2 tbsp. butter
1 tsp. vanilla
2 egg whites
2 tbsp. sugar

Beating lightly, add brown sugar, flour, salt, egg yolks, milk, butter and vanilla. Stir constantly over fire until thick and comes to boil. Pour into baked pie shell. Beat egg whites until stiff with sugar. Spread on pie and bake until light brown. Great Grandmother's recipe from Illinois.
