CHICKEN 'N RICE 
Oil
Clove of garlic
4 onions
2 green peppers
Parsley
Salt
3 c. rice
Yellow food coloring
Saffron
Clams
Capers
Red peppers
2 chickens

Place oil in pan and chicken and fry. Place onions, garlic, green peppers in blender and chop, then add parsley. Set aside.

Wash and strain rice, salt and add to chicken. Add blender mix plus 1 cup of water to clean blender out. Add clams and juice. Wait until boils then add rice, capers and red peppers.

Add 3 cups water with food coloring added to it. Add saffron and wait until it boils. Cover tightly, lower heat and cook 15 minutes making sure you hear it boiling all the time. Remove from heat and let steam. Do not open until ready to eat.
