EASY CHICKEN AND RICE 
4 boneless chicken breasts
1 sm. jar chopped pimento
1 sm. onion, chopped and sauteed
2 - 5 oz. pkgs. Mahatma Saffron rice
2 tbsp. oil
3 1/3 c. water

Cut chicken breasts into 1 inch cubes. Add 2 tablespoons oil to 5 quart pot. Heat on high and add chicken, stir fry chicken 3 or 4 minutes or until done. Add 1 2/3 cups water for each package or rice. Add onions, salt and pepper to taste. Bring to boil, add rice, lower heat, cover and simmer about 20 minutes. Serves 6.
