SCONES 
1 3/4 c. flour
2 1/4 tsp. baking powder
2 tbsp. sugar
1/2 tsp. salt
1/3 c. butter, softened
2 eggs, beaten
1/3 c. milk or cream

Sift together flour, baking powder, sugar and salt. Cut in butter until particles are the size of small peas. Reserve 2 teaspoons beaten egg for brushing tops of scones. Combine remaining egg and milk. Add to dry ingredients.

Stir just until flour is moistened. Place dough on a lightly floured board. Pat to 1/2 inch thickness. Cut each circle into 8 wedges. Brush with egg and sprinkle with sugar. Bake at 450 degrees on ungreased baking sheet for about 12 to 15 minutes. Serve with jam. Divide dough in half.
