CHICKEN THIGHS MOZZARELLA 
8 chicken thighs
1/2 c. flour
2 tbsp. Parmesan cheese
Salt and pepper
1 egg, beaten
2 tbsp. vegetable oil
6 tbsp. butter, divided
3/4 lb. mushrooms
4 slices ham
8 slices Mozzarella cheese

Bone and pound chicken. Combine flour, Parmesan, salt, and pepper. Dip chicken in egg and then flour mixture. Heat oil and 4 tablespoons butter. Cook meat 2 minutes on each side. Remove, drain and place in baking dish. Saute mushrooms in remaining 2 tablespoons butter 4 minutes. Place 1/2 slices of ham over each piece of chicken, scatter mushrooms and top with Mozzarella cheese. Preheat oven to 350 degrees. Bake 35-40 minutes.
