CHICKEN THIGHS WITH PINEAPPLE 
4 chicken thighs
1/2 c. wheat germ
1/2 c. oil or butter
1 sm. can chunk pineapple and juice
1/2 c. raisins
1/2 c. chopped onion
2 tbsp. soy sauce

Remove skin from chicken. Roll in wheat germ and brown in cooking oil; cook until tender. Add remaining ingredients. Cover and cook together until well done. May be served with cooked rice if desired. I like to use brown rice, cooked according to package directions. Serves 4. I have doubled this recipe.
